Found this link. Please copy and paste into your web browser. I believe this is your man. Also looks like he was President of the Florida Convention of the C.S.A also known as Confederate States America.

John was was not president during this convention however he was present and signed this document follow link below. Jon C. Pelot (Alachua) is is listed in the text near the bottom.

Thank you for posting your request on History Hub!
We searched the National Archives Catalog and located Carded Records Showing Military Service of Soldiers Who Fought in Confederate Organizations , 1903 - 1927 in the War Department Collection of Confederate Records (Record Group 109) that includes a file for Pelot, John Crus - Age [Blank], Year: 1864 (Pe-Pem). This file has been digitized and may be viewed online using the Catalog. His rank is listed as Assistant Surgeon.Based on the information that Ms. Lane located and additional web pages that we located, the Secession Convention Chairman/President, John Cooper Pelot, mentioned by Mr. Schneider was the father of the Dr. John Crews (or Crus) Pelot who served at Andersonville. The fact that there was more than one John C. Pelot of Florida involved in the Civil War may be a source for the confusion regarding ranks.
