We searched the National Archives Catalog and located History of the French in Louisiana in the General Records of the Department of State (Record Group 59) that covers 1700 - 1806. The records are not yet digitized and available in the Catalog. For a digitized copy of this volume, please contact the National Archives at College Park - Textual Reference (RDT2) via email at archives2reference@nara.gov and provide this information: RG 59, A1 605 - “History of the French in Louisiana,” NAID 1253236. It may take over a month to receive it.
We also suggest you contact the National Archives of France (Archives Nationales), 59 rue Guynemer, 93380 Pierrefitte-sur-Seine, France for any records they may have. The web site is http://www.archives-nationales.culture.gouv.fr/en/web/guest.

available online through the Library of Congress. The Library of Congress and other libraries may have some reference books on topic as well.
The records of the French Ministere des Colonies are now held by the Archives nationales d'Outre-mer (ANOM), in Aix-en-Provence.
I've also been told that there were some German speaking Alastians that migrated to the French territory in Louisiana during that time period, and was recommended the following works on the topic.- Glenn R. Conrad, "Alsatian Immigration, 1753-159", New Orleans Genesis, 14 (1975), 221-226.
