Technically, you should be able to conduct a search on Ancestry and FamilySearch by narrowing your search for a specific census year and then select the available search fields to narrow your results. The results may not be completely reliable given search algorithms on the different sites, but you can search on other fields without including a name and it will produce a list of people meeting the criteria.
Browsing the census by location would be another option, but would require a lot of manual work to populate a list of people making note of the other variables of interest.
The Census Bureau has various statistical data they already have gathered that reflects some of these variables (ex. https://www.census.gov/population/www/censusdata/hiscendata.html).
