A couple of suggestions for you:
The Still Pictures Branch of the National Archives at College Park has some photographs from the Spanish-American War which include field hospitals. One such series is this one: Spanish-American War. You can contact the staff at firstname.lastname@example.org to get more information about the series and its contents.
There's an article in Prologue about "Researching Service in the U.S. Army During the Philippine Insurrection" which might also be of use.
There are a few microfilm publications that might be of use as well. These are detailed here: National Archives Microfilm Publications Relating to Service in the Spanish-American War, and you can find them in the Microfilm catalog here: Microfilm Catalog.
Finally, archivists have compiled a list of National Archives Records Relating to Service in the Spanish-American War. Most of these series are located at the National Archives in Washington, DC. They can be contacted at Archives1Reference@nara.gov.
