We conducted a search in the National Archives Catalog and filtered for “School North Carolina” within Record Group 105: Records of the Bureau of Refugees, Freedmen, and Abandoned Lands, 1861 - 1880, which resulted in a number of series that may be of use to you.
Some of these are from regional offices so you will want to select the office that best covers the region for Watauga County, NC. It appears that many of these might be microfilmed and available on partner websites, as you are already familiar with. You can look them up and check on their digitization status at NARA’s web page for Microfilm Publications.
